Tuscan Grilled Lamb Cutlets

This recipe showcases The Spice Peddler's A Taste of Tuscany rub. Serves 6

Ingredients

6 lamb cutlets

2 tablespoons Spice Peddler's A Taste of Tuscany rub

1 tablespoon olive oil

Method

Trim any excess fat from the lamb cutlets

Season with the Taste of Tuscany and olive oil and leave to marinate in the fridge for at least one hour.

Remove the cutlets from the fridge and leave to rest at room temperature for 10 - 20 minutes.

Heat your griddle or grill pan on a high heat (until almost smoking) and then grill the cutlets for 2 - 3 minutes on each side if you like your lamb medium rare. Cook for longer if you prefer lamb cooked through.

Delicious served with salad and roast potatoes.
