Coffee-Iced Cardamom Cake


This recipe showcases Green Cardamom.


For the cake
175g sugar
175g self raising flour
100g softened butter
seeds of 12 cardamom pods (ground to a powder)
1 tsp. baking powder
4 tbsp. milk
2 eggs.

For the coffee icing
2 tsp. instant coffee
2 tablespoons hot water
Vanilla extract
125g icing sugar


Add all the ingredients in a large bowl and beat well for 2-3 minute and then pour the mixture into a greased and lined round 20cm springform cake tin.

Bake the cake at 180 degrees C (Gas Mark 4) for 50 - 60 minutes.

Once baked, remove and leave to cool. For a delicious coffee icing topping, dissolve 2 tsp. instant coffee in 2 tbsp. hot water and add a few drops of vanilla extract.

Slowly mix the coffee and vanilla mixture slowly into 125g icing sugar to create a thin translucent mixture.

Spread the icing over the cooled cake and enjoy! Best eaten on the same day as the cardamom tastes stronger after a day.
