Balinese Slow Roast Pork

This recipe showcase The Spice Peddler's Balinese Spice Rub. Serves 8.

Ingredients

2.25kg piece of shoulder of pork, skin scored at 1cm intervals

1 jar Spice Peddler's Balinese Spice Rub

2 tablespoons vegetable oil

Method

Preheat the oven to 220C/ Gas Mark 7.

Weigh the pork and calculate the cooking time at approximately 25 minutes per 450g.

Mix the Spice Peddler's Balinese Spice Rub with the oil and rub all over the skin of the pork.

Roast for 20 minutes, and then lower the heat to 180C/ Gas Mark 4 and cook for the calculated cooking time (approximately 2 hours) brushing the skin every 20 minutes or so with the Balinese Spice blend infused oil to give a beautiful crispy skin.

Once cooked, remove the joint from the oven, and leave to rest on a board for 15 minutes.

Slice the crackling away from the joint and cut it into pieces with a sharp knife.

Carve the meat into thin slices and serve with the crispy crackling.
