Adobo en Chipotle


This recipe showcases Chipotle Chilli


Adobo en chipotle (and a way to use this to marinade a steak)
12 dried chipotle, de-stemmed, split lengthways and seeds removed (or keep them in if you like more heat).
6 Tablespoons good quality tomato ketchup.
1/2 onion, finely diced
1/2 tsp. salt
2 cloves garlic, minced
1/3 cup red wine vinegar
3 cups water


Gently simmer all the ingredients together in a heavy, covered saucepan together for about an hour until the liquid is reduced to one cup. If it's not reduced enough after an hour, remove lid and continue to simmer until it is reduced to one cup. Keep in the fridge in an air tight container and use when required.

Next time you want to stick a steak on the barbie take 3 chipotles, and chop finely.

Add a tablespoon of the sauce, 4 crushed garlic cloves, a tablespoon dried oregano and the juice of a lime. Season the steak with salt and pepper and then rub all over the with the chipotle marinade. Ideally marinade for at least 6 hours. but 45 mins at the very least.

Cook over a hot heat 3-4 mins each side depending on size of steak. Serve with guacamole, salsa fresca and warm tortillas.
